Suzanne, 'tôle' on its own might well be all you need; but as I said before, it all depends on the thickness; I suspect, from the use of 'gauge 3', this is actually pretty thick. I'd be very surprised if it was thin enough to count as a 'feuille' or even a 'tôle mince'. Think of the thickness of 'tôle ondulée' — there's no reason to call that 'mince'. And don't forget that 'tôle' is a perfectly standard translation for '(steel) sheet'.

FYI, 'gauge 3' = approx. 6 mm thick — to me, that makes it a great deal more than a 'feuille', and arguably more like a 'plaque'!

While not presuming to make a suggestion for this term, which is unfamiliar to me, I cannot help pointing out several anomalies in your proposed traduction which seriously merit your review:

It is the 'door' that is 'solid door level III', hence your 'un niveau...' is quite wrong, it should be something more along the lines of 'une porte de classe « porte pleine niveau III »' (you really need to research exactly what this is referring to, and if there is a FR equivalent; also, confirm whether the double 'door' is intentional (possible) or an error (also conceivable).

« ...avec des feuilles internes et externes, jauge 3 ... » I very strongly suspect that 'sheet' is more than just 'feuille' here, and 'jauge' is less common (though still feasible) for a thickness gauge in FR; you really ought to check just which particular 'gauge' is being referred to, as it might be necessary / desirable to convert to metric units.

And finally, 'grid' might not be the type that translates as 'grille' — however, this is something only your wider context (or a question to the customer) may enable you to tell.
