I feel that 'Besonnenheit' is probably describing the thought processes rather than the mental health of the person in question.

This is the slightly old-fashioned formula used in some English wills, but I accept that you will have to add something to get the "mit Ueberlegung und Ernst" bit.

: You might also say "sound mind and judgement" - a litlle free as a translation, but exactly what we say in English.
