i realize i might be asking too much, but here's my story: in copenhagen i tried these delicious pastries called thebirkes, and ever since then i've been obsessed with the desire to try and bake them myself.

i finally found the recipe, only it's in danish (i really-really tried to find it in english, but all in vain). if anyone can please translate it for me, just the basic facts - ingredients/directions, - i'd be most grateful.

Blå eller alm. birkesfrø

Æggestrygelse:
1 æg str. M
1 dl. mælk.
(Begge dele piskes godt sammen)

Sådan lægges dejen: Gæren opløses i mælken, hvorefter melet melet og de øvrige ingredienser tilsættes og dejen æltes godt igennem. Lad dejen hvile 5 min. hvorefter den rulles ud i en størrelse på ca. 20 X 65 cm.

Den udrullede dej pensles med æggestrygelse der i dette tilfælde bruges som "lim". Dejen foldes dernæst sammen, så der dannes tre lag. Vendes, så samlingerne vender nedad. Den del der nu vender opad, pensles med æggestrygelse og drysses med birkes.

Dejen deles i 15 - 17 stykker og fordeles på bagepladen, der beklædt med bagepapir. Lad dem hvile lunt i ca. ½ time eller til de har opnået dobbelt størrelse.

Placér pladen i bunden af en kold (!) ovn og indstil temperaturen på 220° C. Alt afhængi af, hvilken ovntype du er i besiiddelse af, vil den samlede bagetid være 20 - 30 min. incl. opvarmningstid. Selve bagetiden er 10 - 15 min.

Tips: Når jeg anbefaler en kold ovn ved start er det fordi, at dejen dermed får lov til at hæve det sidste stykke tid og alle gærcellerne har ædt sig "fede" i sukkeret. Det er det der sker, når en gærdej hæver. Hvis man, f.eks. på grund af utålmodighed, ikke lade dejen hæve inden afbagningen, vil varmen i ovnen straks lave "skorpe" på brødet og en ydeligere hævning af produktet er umulig. Derved får man et produkt uden luft i = hårdt som en sten og med mere gærsmag end de fleste bryder sig om.

Du kan evt. lave Thebirkes af en dobbelt portion dej og fryse dem løs på en bageplade, lige efter de er udrullet, foldet, formet og penslet. Så kan de tages op i det antal stk. du har brug for. Tør forholdvis hurtigt op. Efterhæver og afbages som ovenfor beskrevet.
