Normaal moet zetmeel eerst verwarmd worden vooraleer het dik wordt. In heel veel producten is die verwarmingsstap erg lastig, of zelfs onmogelijk. Zetmeel wordt dan chemisch veranderd/gemodificeerd, zodat dit wel mogelijk wordt. Een van de modificaties is voorbehandeld zetmeel; dit is zetmeel dat al verhit is geweest en dus al gedeeltelijk verstijfseld (GEZWOLLEN). Daarna wordt het gedroogd. Het eindproduct is dan oplosbaar in koud water en geleert dan verder. Chemisch is het zetmeel dus nog intact, maar het heeft dus een voorbehandeling ondergaan.
'Erythrosine' blijft 'erythrosine' in het Engels en is een synthetische rode kleurstof
