grappa Explanation: Grappa is an alcoholic beverage, a fragrant grape-based pomace brandy of between 35% and 60% alcohol by volume (70 to 120 US proof) of Italian origin, similar to Spanish orujo liquor, French marc, German Weintrester, Serbian, Croatian, Bosnian and Montenegrin lozovača or komovica or Chacha, or Republic of Georgia and Portuguese bagaço. Literally "grape stalk", most grappa is made by distilling pomace and grape residue (mainly the skins, but also stems and seeds) left over from winemaking after pressing. It was originally made to prevent waste by using leftovers at the end of the wine season. A similar drink, known as acquavite d'uva, is made by distilling whole must. The flavour of grappa, like that of wine, depends on the type and quality of the grape used as well as the specifics of the distillation process. |

Le acquaviti di vinaccia L’Italia produce una consistente quantità di Grappa, sostanzialmente di due tipi: uno più grezzo, l’altro invece più elegante, spesso da un solo tipo di vitigno e confezionato in eleganti bottiglie. Entrambi i tipi di Grappa possono non essere invecchiati oppure maturati qualche anno in vecchie botti che smusseranno gli angoli vivi del distillato, senza conferire molto sapore o colore. Il Marc francese viene prodotto in tutte le regioni vitivinicole del paese. Il Marc di gewürztraminer dell’Alsazia è particolarmente degno di nota perché conserva alcuni dei profumi distintivi ed il carattere aromatico del vitigno. Le acquaviti di vinaccia della California sono in generale fatte con lo stile italiano e sono normalmente chiamate Grappe, anche se vengono fatte con vitigni non italiani.
