English term or phrase: rate limiting step
5-FU is further catabolised by the enzyme dihydropyrimidine dehydrogenase (DPD) to the much less toxic dihydro 5 fluorouracil (FUH2). Dihydropyrimidinase cleaves the pyrimidine ring to yield 5 fluoro ureidopropionic acid (FUPA). Finally, -ureido-propionase cleaves FUPA to -fluoro -alanine (FBAL) which is cleared in the urine. Dihydropyrimidine dehydrogenase (DPD) activity is the rate limiting step.

paramètre cinétiquement limitant
Explanation:
En générale c'est l'étape limitante, en particulier pour la vitesse de la cinétique de réaction. Ici je dirais plus "paramètre" car le sujet est l'activité de la DPD
