Herre is what I found:

"Nous commençons toujours par un égouttage sans pression. (...) Les jus s'écoulent uniquement par gravité vers des cuves situées sous des pressoirs sur deux niveaux differents."

The word "winery" is sometimes translated by "vinerie" but that word seems to be used mainly in Canada or in translations. In France, they seem to use the word "caves a vinification".
