'colour primary' is not (necessarily) the same thing as 'primary colour', and the 'inverted' form causing doubts for Gilles and Hugues refers specifically to the three channels of the scanner (or whatever other device) used to create a digital signal from the film image. But these 3 channels may not actually carry the classic 'primary colours': red, green and blue.

'échantillonnage' comes from the English text - which if written out in full would say "... colour primary sampling depth (resolution) ...". But many writers shorten 'sampling depth' to just 'depth', which is OK until you need to translate it into French and you have to put the 'sampling' back in the sentence and talk about 'resolution d'échantillonnage'.

Basically the sentence is saying the new version provides better horizontal and vertical (spatial) resolution and greater accuracy in the rendering of colours by an increase in the number of bits used to represent each of the 3 colour primaries. The first digital colour systems used 8 bits/sample/channel - they progressed to 16, then 24, then 32 ... and so on, giving better and better colour accuracy.
