There are some terms on the first page of books I don't know the exact translation for (since I don't translate books very often):
-Commissioning editor
-Project editor
-Copy editor
-Art editor

These are merely a some suggestions. I must say that I've never seen the term "commissioning editor" or "project editor" in a book before (although that doesn't necessarily mean much). I think that you might be able to simply rephrase these various responsibilities and perhaps name the departments rather than the job titles.

Projektleitung, maybe Projektleiter

Redaktion, maybe Redakteur
-Art editor -
Layout or Design

I did find art editor as Cheflayouter, Chefdesigner, Leiter der graphischen Abteilung in Koschnick, Standard Dictionary of Advertising, Marketing, and Mass Media

Im Verlagswesen wird der editor, also der Bearbeiter, statt als Redakteur als "Lektor" bezeichnet. In der Auflistung wären also die für die verschiedenen Bereiche zuständigen Lektoren aufgeführt, also verantwortlicher, Projekt-, Manuskript- und Kunst-Lektor.
