there are different kinds of stress to which yeast is exposed (ethanol, osmotic and oxidative) which can result in an inconsistency of the fermentation process. Comparing a heterogeneous population (each cell reacts differently to singular stressors), in contrast to a homogeneous population (same strengths but also weaknesses), heterogeneous populations showed a * flat slope decrease* in viable cells while with homogeneous cells toxic concentrations of stressors had to be higher but then caused nearly total decrease of viable cells at once
