This is the sentence -
In this department the carcasses are automatically weighed and then graded. uses the Hennessy Probe to grade all lamb carcasses. The information from the probe, fat depth and muscle depth, in conjunction with the weight gives a grade. This grade produces a payment for the farmer and a cutting family for the Further Processing department.

This is the definition:
The 'cutting family' is a grouping of carcases that have similar characteristics eg. weight, fat depth.
As an example we have light, medium and heavy groups.
This grouping allows us to sort and process the carcases together.
'Cutting' is the wording we use for processing where carcases are cut with a band saw and then further processed into individual pieces.
