If I wanted to title in spanish,"Spanish Notebook". Would it be El cuaderno de Espanol? or Just cuaderno de espanol?

Explanation:
All of the proposed answers are very similar and all of them are absolutely correct. However, if the notebook were mine, I would just label it "Español".
As a student of English and Russian I have always wrote "English" or "Russky" to my notebooks, I don't think it's necessary to specify "cuaderno de..." as it's more than obvious that the object you are naming is a notebook. Anyway, as I said, it's up to you :)
