English term or phrase: key
Este es el contexto

On concrete, masonry, older plaster, or other surfaces to improve the ***key*** for subsequent coats.

Y esta es la definición del término:
KEY - Plastering: the roughening of a surface to form a bond for subsequent work.

Pero no puedo dar con el término en español.

Sería otra opción, basada en el Oxford y en el DRAE:

2

Building
(surface) (para una mejor adhesión de baldosas, azulejos etc) estriar

English example sentences

If the piece is varnished or painted, sand it well to remove most of the finish and key the surface.

Where no keying mix or bonding agent is specified, wet smooth concrete surfaces immediately before plastering.

You also have "enjarje" and "adarajas", but these terms seem to apply to bigger masonry activities...

enfoscado

Explanation:
'enlucido' es la terminación 'finish' (en España)
https://dle.rae.es/?id=FIjJDXf

enfoscar
Del lat. infuscāre 'oscurecer1'.
1. tr. Constr.

-> muchas gracias, John. Abrazo :-)

neutral  Robert Carter: I'm not sure it means the coating itself. I think the idea here is to improve the "quality of the grip" or "stick-ability" for the next coat. ¡Saludos MPGS!

agarre

Explanation:
"To key" (i.e., as a verb) means roughening the surface on which plaster is going to be applied. It usually means making scratches all over the surface.
As it's used here, as a noun ("to improve the key"), I understand it to mean the grip for the next coat.

agree  JohnMcDove: Viéndolo otra vez, tu opción tal vez sea la más clara, en un registro coloquial. Dependerá del registro y el nivel del test..., pero me parece válido también. :-)

-> Thanks John. In fact, your idea would normally be perfect to describe that "scratching", but in this context, they're using "key" to mean the "grippiness" (¡válgame!) rather than the actual scratches or act of scratching, if you see what I mean.

enjarre

Explanation:
A mi me parece que es esto. Puede ser un enjarre acabado fino. O los enjarres gruesos para posteriormente revestirlos con otros productos o terminados finos. Incluso el enjarre grueso se usa como base para revestir con mosaico, azulejo o piedras y acabados finos.
