Y, aunque no me convence la palabra, defensividad sensorial.
No me convence "defensividad" porque no la encuentro en diccionarios de español y porque el 80% de los sitios en que aparece se refieren a las abejas (?), pero los links de abajo sí son de psicología y la incluyen. Tal vez sea aceptable en el área.

Las respuestas anteriores me parecen muy acertadas. Yo propongo "aversión sensorial" puesto que tener aversión hacia algo significa, concordando con su contexto, una tendencia a reaccionar negativamente o con alarma ante algo, en este caso, ante el estímulo sensorial.
