Por curiosidad, porque no me sonaba, consulté la referencia dada por Dolores.
Ni en IATE ni en la red se encuentran los términos "sound wine", "vino franco" o "vino sano" con el sentido de "no alterado" o "no defectuoso"

Como aquí se habla de vinos (en plural) y con DOC, sólo queda recurrir a cualquiera de las acepciones posibles de "sound" como adjetivo, entre las que sugiero algunas aplicables en este contexto: acertado, atinado, convincente, sólido, válido, satisfactorio, placentero, apetecible, agradable, grato, ...
