skärpstål

Explanation:
The term Daniel suggests may be correct, but I do not understand how to "make a båge":
Sätt knivbladet vinklat till skärpstålets övre ände.
Dra därefter knivbladet från handtagets början ända fram till knivspetsen i en lätt båge nedåt på skärpstålet.
when I look at video how to use it, I do not see any "båge"....

I like skärpstål and choose it as being the best translation... bryne is impossible, that is something else.

I do not like Joakim Braun's comment at all, very pushy, why should I show a video and it is myself who question the source text's "einen Bogen machen".

neutral  Joakim Braun: So where is the video? And "en lätt båge" doesn't sound like a very good translation.
8 hrs
-> "Where is the video", there are hundreds, why should I choose one, and as for båge, the German original has ein leichter Bogen.... what can I so to change the ORIGINAL??
