I think that although there may be a linguistic difference in what is implied by these 2 different terms, the reality is that most people wouldn't know what the difference is. So if the context is a text aimed at consumers there is no real difference

"fruit-only" makes no sense


Explanation:
I fail to see how a preserve could be labelled as "fruit-only" and not fall foul of the Trade Descriptions Act. "Fruit-only" sounds as though there is nothing in it but fruit, but there must be other ingredients, such as sugar, so "fruit-only" is an entirely false description. If what is meant is that there are no artificial additives, then that needs a different sort of wording.

There are no sensible Google refs. for "fruit-ony preserve" or "fruit-only apricot preserve" - I think you should be extremely wary of using this term.

neutral  lindaellen: The label of my breakfast confi. has only fruit - no sugar, no, water, no addititves. It's made by Migros in Switzerland.

Explanation:
For breakfast I just had (really!) toast with a Swiss brand called "100% Pure Fruit". There is nothing in it but fruit, fruit juice concentrate - as a sweetener- and pektin (which is derived from fruit). I would say that this is "fruit-only". "All fruit" seems to me less inclusive and could include sugar or other sweeteners - however here I could be wrong and it could be only fruit, too, but to me "fruit-only" is clearly - fruit - and that's it. The other is not linguisitically quite so clear.
