I am translating a short document about HACCP procedures followed in a bakery firm. I don’t understand the phrase ‘’Weigh up traceability record’’. I know what traceability is, I know what ‘’a record’’ means, but the whole phrase is not at all clear to me.
Any help would be greatly appreciated.




‘’PURPOSE
To describe the procedure used to carry out monitoring on CCP 1 – sieving.

SCOPE AND RESPONSIBILITY
This procedure refers to sieving that is carried out on all hand ingredients and on the bulk flour delivered from the silo. This procedure is the responsibility of the Quality, Production and the Maintenance Managers

METHODOLOGY AND STANDARD

A sieve check is to be carried out each time a bag is sieved on the hand ingredient sieve and weekly on the bulk flour delivery sieve. Maintenance carry out the bulk silo sieve check, production carry out check on the small hand ingredient sieve and QA carry out a daily and weekly verification check of this CCP.

This is one step above a guess. I take it to mean that the traceability recording is to be performed and documented at the time of the sieve check, for each bag or quantity of product sieved.

So, each time a sieve check for 'hand ingredients' is done, and at the weekly bulk flour sieve, the traceability documents are marked for tracing back to the specific bag or bulk amount that gets sieved, connecting the product to the traceability documentation that came in with the flour product. It's a checkpoint.

I have seen a similar procedure done when poultry was going from raw to cooked, and again from cooked to multi-ingredient packaging (frozen dinners.) HTH
