English term or phrase: bed-and-breakfast without the breakfast
A Guesthouse is basically a Bed and Breakfast, without the breakfast. A home that offers rooms or beds to travellers, usually at cheaper rates than hotels. This is a great way to learn more about the people and cultural traits of the country you are visiting. If you are open and willing to new experiences, you could be more than likely offered to have a traditional meal with the accommodating family.

Could you please explain the opening sentence, i.e. A Guesthouse is basically a Bed and Breakfast, without the breakfast.

B & B where one B is skipped
Explanation:
Bed-and-breakfast are popular accomodation in America during vacation season for budget-minded vacationers. Majority are in a pop 'n mom (means husband and wife) family operations, and offer bed and breakfast (name is self-explanatory).
Though in your example it offers just bed, and that is quite peculiar to me (I have not known such place myself whereas I had stayed few of B & Bs myself).
Although I don't know any similar operation outside of America, the accomodation is usually detached or separate from the family's house. However, could be a part of the family house as below definition indicated.

breakfast not included

Explanation:
This just means the guesthouse only provides you with a bed to sleep in, not with breakfast in the morning. Am I missing something here?

another name for a hotel, but indicating lower prices than a hotel

Explanation:
A "guesthouse" another name for a hotel, but indicating lower prices than a hotel. (That breakfast is not included in the price isn't really relevant.)

The idea is to indicate a smaller more informal accomidation, and not as expensive as hotels.

(Guesthouse also refers to free accomidations, such as at a university; but that isn't what you are asking here.)

a room in someone's house

Explanation:
a bed and breakfast is not always an "establishment" and is not a "hotel". It is basically a bedroom and bathroom in someone's house made available to the public. The original idea was to go someplace homey and not to a cold, impersonal hotel.

Here, no breakfast is offered.
