Mon premier réflexe aurait été de dire "on dit bien méthyler, alors pourquoi pas vinyler ?"
Mais bon en interrogeant google on trouve couramment vinylation, mais pas vinyler en tant que tel, d'où ma suggestion de contourner le verbe en tant que tel.

agree  Jean-Marc: Tout à fait juste. Ceci étant, on trouve bien, e.g., les participes passés "farnésylé" ou "géranylgéranylé", alors why not l'infinitif de "vinylé".
