here is the explanation the tech writer gave me for the process:

We scratch "score" a line in a piece of plexiglass-like material then push one side of it until the line where we scratch breaks. This is called running the score since the break begins at one end of the score and ends at the other. It is also called break out. This is when we break out the piece that has been scored. We do this right on the machine, something the competition can't do.
