Since your text is clearly directed at catering professionals rather than the general public, it is important to note that 'check' takes on a different meaning whether it is used in the informal, everyday sense as with the customer ("Could I have the check please?", "Here's your check, madam" etc.) or in the specific technical sense of 'the amount spent per capita' (and note that in a similar technical usage, we often refer to 'a spend' in EN too, albeit not necessarily in catering).
