Here in Canada, it is "poitrine de dinde". I should know, because I have used the term every year, several times a year for over 50 years now!

Now, when you are asked what kind of meat you want, you may say "Je veux du blanc" or "je veux de la viande blanche", but it is already assumed that you are getting into the nitty gritty of choosing meat from the turkey in question. You have already established that the turkey has "poitrine" and "cuisses".
