La plupart du temps, pour le porc, c'est le gras qui entoure la viande, dont je me sers, par exemple, pour le lard qui entoure un bon pâté ! C'est plein de cholestérol, mais c'est vraiment délicieux. Ici aux États Unis, il faut demander au boucher de vous réserver de ces "trimmings" quand on veut préparer un pâté, car, normalement, on les jette, tout court.
