It is best to reverse the order in German and start with field, i.e. Feld zur Variablenbestimmung, Feld zur Variablendefinition, Feld zur Definition von Variablen and the like.

Feld "Variable Definition" / Feld "Variablendefinition" / Variablendefinitionsfeld

This looks very much like something from a software user manual. The key question I would ask is if the software strings themselves are being translated, i.e. is the term "Variable Definition" s.th. that appears in the user interface? Is the user interface translated, or does it stay in English? You can then determine which phrase to use in the German.

If this is just a generic field in which variables are defined, i.e. not a direct software reference, Variablendefinitionsfeld should be just fine and, in my opinion, a better and clearer translation than s.th. like Feld zur Variablendefinition.
