Italian translation:In bocca al lupo...
Explanation:
I have to warn you that often Italians have the habit to reply to "in bocca al lupo" with "crepi", meaning "I hope he - the wolf - dies" (and doesn't eat me!). In Pisa (and Tuscany in general), the expression is quite more vulgar. You say "in culo alla balena" (up the whale's bottom) and the answer is... I hope he doesn't crap! I know it's just a letter, but I thought you should know (in case you receive a strange answer)! :)

In bocca al lupo per il nuovo lavoro e fatti sentire!

Explanation:
Oppure "in bocca al lupo per il nuovo lavoro e non sparire!"
Ti ho dato due possibili alternative. Concordo con i colleghi ma l'aggiunta di "spesso" non mi piace molto e non mi sembra adeguata in questo caso.

"In bocca al lupo" means literally "in the mouth of the wolf" and is very nice way of saying "good luck" among Italian friends.
"Fatti sentire" is literally "make yourself heard", and "non sparire" is "don't disappear": both phrases are equally usable in this context.

....In bocca al lupo!
