Definition from winedoctor:
A heavy sediment consisting of dead yeast cells and other solid matter such as grape pulp, pips and so on. Keeping the wine on the lees, especially if they are stirred from time to time, may be beneficial to the wine, imparting extra flavour and body. Eventually, however, they must be removed. This may be achieved by racking the wine off the lees. Residual solid matter may be removed by filtration.

A borra, ou pé, consiste no depósito sedimentário que repousa no fundo do recipiente que contém o vinho. É formado, basicamente, pelos resíduos de fermento e demais materiais orgânicos provenientes da fruta.

Os vinhos sur-lie, (sur= sobre; lie = borra) são aqueles vinhos não-filtrados, que são engarrafados direto do recipiente, onde repousaram sobre a borra, para a garrafa, sem qualquer filtração para removê-la. Interessante notar, neste último exemplo, a semelhança fonética entre "lees", o termo em inglês, para "lie", o termo francês para a borra.

Yes  Joao Vieira: Correcto. Por vezes também se diz que a garrafa "tem depósito". Este depósito é a borra do vinho acumulada na garrafa ou introduzida com a intenção de intensificar (encorpar) o próprio vinho.
