How is "to pet a dog" (in the common English sense of stroking its fur) translated into Russian? I am confused over the two terms I have found: and ... . Does imply more affection? Thanks.

гладить; погладить
Explanation:
1) гладить = to stroke, with or without affection, and nothing more, ie attitude towards the pet you are stroking may be vary
2) ласкать = to caress, implying not only stroking the fur of your pet, basicly with affection, but also kissing, affectionate tapping, back-slapping, etc.

Explanation:
Of the two you've found гладить is more neutral and suits better, though if you say приласкать собаку only the perverted mind will think something dirty :=). But again to pet also means stroke intimately, so does ласкать.
