Yo he buscado en todos los espabilaburros que tengo y todos te lo definen como carne o pescado fresco, y esto no se lo come ni un caballo. Sin embargo, el Collins también lo traduce como "persona seria". Esto es muy slangy, así que "seriote" parece menos...serio .¿Así que qué te parece esto?: "Los dueños de los caballos, dos tíos seriotes, se encontraban dentro del cercado". Salud and a warm cut :-))

My first thought was that this was some sort of slang (rhyming maybe?), but now I'm not so sure. "In the rail" doesn't sound right either. A bit more context would be useful.
