To 'hedge' (as in 'hedge your bets (apuestos) - the standard English expression) means to 'speculate in such a way that you try to minimise your overall losses', i.e you try and make sure that your losses in one area are covered by gains in another area.

Translating the entire passage brings up two problems:

1 You'll have to include the word 'hedging' in ( ), otherwise that particular sentence will sound strange (because the Spanish term is far more transparent than the English one - you'll sound silly saying that 'cobertura del riesgo' is... 'reducing risk', if you get my drift)
2. You'll have to translate the 'sense' of 'hedge' within the context of the entire second sentence, given that here 'hedge' means 'speculate' rather than 'cobrir el riesgo' (becuase the implication is that in fact the risk is NOT covered, due to errors in predicting the market conditions).

Se trata de una técnica para proteger el valor de posiciones o carteras, en general contra bajadas de precio de los activos que componen la cartera, mediante productos derivados como futuros, opciones, swaps, etc.
En ocasiones se utiliza también el término en inglés, "hedging".

I would say that cobertura fits better in the sentence. Ref.Securities Dictionary EN<>ES by Dearborn Financial Institute and Business Dictionari EN<>ES by Steven Kaplan. Hope it helps.
