neutral  Elizabeth Ardans: en realidad creo que no es lo mismo, porque cuando se hacen a la provenzal se dejan con cáscara (no se pelan) pero igual se le arrancan las barbas

Yo diría "limpiar" a secas. Cierto que he oido "desbarbar" pero, quizás, "limpiar" es algo más universal para todos los hispanohablantes. Suerte ;)
