Asker: Siento discrepar pero en el texto aparece ya otra expresión para "harina de fuerza": strong flour. TENDON parece ser un calco de una palabra china. Finalmente he optado por sustituirla por la expresión "harina con alto contenido en proteínas" que es lo más aproximado que he encontrado. De todos modos, muchísimas gracias.
