Explanation:
As you say, these are types of pasta that are known by their names in Italian. They are written in their plural form because you always have to serve more than one, in the singular it would be 'tortello' 'linguine'. Please don't fall into the heresy of calling them 'macarrones' as most Latinamericans call pasta in general!
