Now, therefore, in cosideration of the mutal promiises set forth herein, and other good and valuable consideration, the receipt and sufficiency of which are hereby acknowledged, the parties agree as follows:

I thought they were trying to do away with that kind of legalese!

I think that the 'good and valuabe' consideration amounts to a payment of some kind, and its 'receipt' has been acknowledged and also its 'sufficiency' - the fact that FULL rather than partial payment has been made (unless partial payments were agreed to, in which case the receipt is acknowledge for the agreed partial amount).

So that's my interpretation that not only has payment been made but the RIGHT amount has been paid. Hope this helps.
