“Off the top” in general means taken directly from the gross amount. (Some examples of these types of expenses in your context can be found in the following texts.) I think you could call them “gastos deducidos de la cantidad bruta” o “de los ingresos brutos”, something like that.

Motion picture distributor "first dollar" gross receipts: Gross receipts (film rentals and ancillary) minus "off the top expenses" (trade dues, checking and collection fees, taxes,
residuals, any other mandatory union/guild/association royalties and other variable marketing costs that are co-related to increasing receipts and that exceed the marketing

The one and only advantage songwriters have is they see a "mechanical," legally protected royalty from every record sale (as opposed to performers who see royalties only after the record company has deducted all costs, advances, etc. from the recording artists' small percentage as opposed to taking expenses off the top as it should be.
