Creo que tus instintos fueron correctos, porque "walk-through" implica más que un ensayo: el encargado lleva a los participantes "de la mano", enseñándoles como realizar el procedimiento paso a paso. No sé se éste sea el término más adecuado, pero sí se usa en contextos similares al tuyo.
