Creo que tu texto es literario. Aquí va mi propuesta :

El dijo que varios inviernos secos en sucesión, seguidos por una primavera fresca que tuvo un efecto muy negativo sobre el bulbo de la fruta, sumados a largos períodos de clima muy caluroso en enero y febrero habían colaborado para reducir casi un cuarto de los niveles generales de cosecha, y aún más en algunas vin~as más viejas y que se han ido secando.

Pienso que se trata aquí de la distinción entre 'irrigated' and 'non-irrigated' cultivation of vines.

The dry grown vines would be vines that need little to no water.

I suggest 'viñas cultivadas en seco', a term which I saw a lot when translating encyclopaedia entries (decribibg the agriculture of a region).
