Supongo que a se refiere a esto. Las famosas milanesas no son más que lonjas de carne pasadas por huevo y pan rallado. Cuando sigues este procedimiento, se dice "empanar".

Hola, una aclaración media tonta, pero al pan rallado aquí también se lo conoce como "rebozador".
