English term or phrase: holding time
If extended holding time is required, the best results were achieved by baking hte potatoes until done... This can improve holding time up to 45 min.

"Testing on 90 count Idaho® Russet Burbank potatoes baked in conventional convection foodservice ovens was done to determine the time difference, if any between unwrapped and foil wrapped baking of potatoes. In addition, a holding study was completed to determine what is the optimum foodservice holding methods and time for conventional oven baked Idaho® Potatoes. For the baking, both a gas range and electric convection oven were compared. For holding, a two drawer warming oven unit, a two bulb heat lamp and a heating/proofing cabinet were used
The results disprove the theory that foil helps reduce the cooking time required. Wrapping potatoes in foil does not accelerate baking. It takes, on average, an extra ten minutes to fully bake a potato by wrapping it up first. The aluminum foil must be heated up before the potato can start to bake.
---->If extended holding time is required, the best results were achieved by baking unwrapped Idaho® Potatoes until done, then wrapping in foil. This can improve holding time up to 45 minutes without substantial loss in the taste/texture of the finished product. <------ The best methods observed for holding the potatoes at temperatures in excess of 180°F for 45 minutes are the use of a warming drawer or the heat proof cabinet."

I suggest 'tiempo de punto' o algo parecido, in other words an expression that conveys the idea of prolonging the period between cooking and eating, without the food losing any of its attractiveness

This can improve holding time up to 45 min.

Puede prolongar el tiempo entre preparación y consumición hasta 45 minutos

I can't think of a better way to say this, but maybe you'll get ideas of your own.
