no uses vejez. Puedes usar añejamiento, en todo caso. También se habla de la edad del vino.

SOLERA : ...a partir de este momento comenzaría la crianza y añejamiento del vino según el sistema de soleras y criaderas. La finalidad de este proceso es conservar un tipo de uniforme en edad y estilo sea Fino, Manzanilla, u Oloroso. Resumiendo, consiste en un almacenado de botas de un mismo tipo de vino pero de distintas edades. Las botas de la misma edad se conocen como \"ESCALAS\". La más antigua de estas es la contiene el vino mas añejo y se denominas SOLERA, está situada a ras del suelo. A esta le siguen en edad las otras escalas que se llaman \"1ª CRIADERA, 2ª CRIADERA\", etc... La última de estas contiene el vino mas joven.

Intentaremos explicar ahora el proceso de crianza en este sistema:

de las botas SOLERA se extrae la misma cantidad de vino para embotellar, no mas de un tercio al año. Esto se conoce como SACA...\"

- new wine: from the end of fermentation to the first racking
- young wine: from the first racking to the next vintage
- racked wine: after one year old age
- matured wine: at the zenith of its development
- aged wine: more than two years old
- worn out wine: wine beginning to lose its good qualities.
