but, I am Mexican too (not living in Mexico now, but lived there my whole life except for the past 7 years) and I have never ever heard them called costillar, maybe it is a new word used, :-)

Thanks for your translation, Im going to use costillitas de puerco (baby back ribs is pork), I also believe costillar for ribs is correct.

En Segovia, España en el mesón de Cándido hay una especialidad típica que es cochinillo asado. En España todo el mundo entendería esa palabra, pero lechón y cebón son palabras castellanas para el cerdo que mama, aunque en la actualidad menos extendidas.
