Es el monólogo interior de una joven, que siente "algo" (that) por un hombre, pero no quiere que "they" saquen a relucir ese "that".

el clasificar sus asuntos / la clasificación de sus asuntos


Explanation:
me queda bastante claro que "sorting out" es muy similar a lo que sigue poco después, "picking over of her life", pero tendrás que diferenciar entre los dos. En cuanto a "sorting out" me parece que es el mismo tipo de "sorting" que lo hace el cartero con las cartas antes de hacer su ronda de entrega.
