English term or phrase: leaf fat
It is a training program for a company that sells fast food chicken. The term "leaf fat" appears in relation to the thigh of chickens. The person preparing the chicken is instructed to take the "leaf fat" off the thigh.

I know that leaf fat (in pigs) refers to the highest quality fat found in the carcass, generated from the kidney area, but I have never seen applied to chicken, and even less to chicken thight!, and I cannot find the Spanish for it.
Thanks a lot,

Película de grasa

Explanation:
Quizá se refierea a una "película de grasa". El término película se usa cuando se refiere a "capas finas" de algo; que es a lo que se refiere la palabra "leaf".
