Explanation:
Blanching is NOT whitening/blanqeador in relation to food. This is a heat process "scalding" to inactivate enzymes. If the enzymes are not inactivated, deterioration will result during drying and storage. Unblanched vegetables (except for chili peppers, onions, celery & garlic will have poorer flavor and color after they have been dried. This preserves the vegetables color, flavor, texture and nutritive value. In some cases blanching is used to remove the skin from vegetables & fruits such as tomatoes, beets and peaches before canning or pickling. This is also done to prepare vegetables for freezing. This is not a complete answer to the request, but I felt it was important to shed some light on food preservation as it is practiced today and remove the idea that it was about BLEACHING food. Not looking for KudoZ points, just love all cooking techniques!! Previous answer referring to heat/steam process is on the right track.Hope this is helpful in rounding out your frame of reference. AW
