Cuando el compuesto responsable del sabor se determinaba mediante degustación, el compuesto supuestamente responsable se analizaba mediante cromatografía de gases-espectrometría de masas (GC-MS). Cuando la concentración del compuesto responsable del sabor era baja y no se podía distinguir degustando, el pico correspondiente a dicho compuesto se localizaba mediante la cromatografía de gases con detección olfatométrica y, a continuación, se identificaba por medio de la GC-MS. con: ABSTRACT J. Sabor desagradable / anormal Explanation: La traducción de "off-flavor" debe incluir el elemento negativo de que el sabor es "inadecuado", no solo extraño. Es común encontrarlo sin traducir, directamente como :off-flavor".
