I can't recall ever seeing "patinated frescoes" and there are only 5 Ghits (all relating to the same church. It makes it seem like the frescoes were delinberately patinated which I assume is not the case here.
I think this is more commonly described as
a patina of time or age, or
marked/characterised by a patina of time/age or even
weathered by a patina...in some cases
the patina usually caused by the darkening of varnish which clouds the original colours underneath...
or here "the mixture of glue, soot, dust and incense..."

agree  Catherine Demaison-Doherty: Yes, showing "the patina of time". Unless, depending on your context, a "faux" patina has been applied, but since the works date back to the 19th century, I imagine that is unlikely.

agree  Christopher Crockett: Is "patinated" even a word?I've never seen it. And an artifical (i.e., deliberately induced) patina on a 19th c. painting would imply an intention to deceive for the purposes of fraud, it seems to me. Varnish darkened with age is the most likely culprit.
