rancid pork suet Explanation: This is really a Catalan word. It means pork fat, and specifically 'suet', the harder fat that surrounds the kidneys, that has been salted and allowed to turn rancid. Doesn't sound very appetizing, but it is a classic ingredient in this dish, so I think you'd do best to keep the Catalan term and then add an explanation (as in the reciped found by Noni), for those brave enough to try it! |
