as a result of an overvoltage

Explanation:
Surtension could be either overvoltage or surge but the most likely use for a varistor would be to reduce spikes. As a result of, because it is effectively instantaneous rather than following on after an overvoltage. Your choice of resulting from an overvoltage is therfore good.

following a surge in voltage; following a voltage surge

Explanation:
(The surge is in voltage, and not, for example in the onlooking crowd.)
évacuation du courant consécutif à une surtension = withdrawal (or diversion) of current following a voltage surge.

(Depending on context, namely the characteristics and purpose of the varistor, one might also consider "following an overvoltage".)

agree  chris collister: Yes probably desirable to include the "voltage". Varistors are often used to control voltage "spikes"
