'Hello everyone!'

Explanation:
This would be the phrase I would use - a typically English informal opening to a letter.

Greetings everyone", "My salutations to all"

Explanation:
This expression really means "Salutations to everyone" or "I salute you all". With time, it has become something more familiar and is now considered merely a (brief) greeting formula. ( It is used extensively in Québec, by the way, as a very friendly greeting. "Hé! Salut tout le monde!")

I would translate it with "Greetings everyone" or "My salutations to all", even though this sounds a little high class, because it has the right "feel" to it...
