Adjoint au chef -boucher volant

Leider kein Kontext. Es handelt sich um eine Bezeichnung, die auf der Website einer Metzgergruppe auftaucht. Der "Adjoint au chef -boucher" wurde mit Assistent(-in) des/der Metzgermeisters/der Metzgermeisterin übersetzt - doch ich finde nichts dazu, was das "volant" hinter dem zweiten Eintrag bedeuten könnte. Hat jemand eine Idee?
